Buckwheat Pancakes/Wraps

Buckwheat is not related to wheat in any way and is also gluten free (although always check packet that this is confirmed) so is perfect for those on a wheat/gluten free diet. These pancakes can be separated with clingfilm and stored in the fridge for one day or frozen for up to one month. Reheat them on both sides in a frying pan.

100g buckwheat flour
1 large egg
300 ml water or half water, half milk
Pepper

Using a whisk, mix the flour and egg, gradually adding the liquid until the mixture is like thin cream. Add pepper.
Lightly oil a hot pan or griddle and poor in a ladleful of mixture and cook for one or two minutes until it pancake can be turned over and cooked the other side. When cooked, place on clingfilm and continue making another pancake.

Day one March Fat Scrap

My name is Jayne.........
Well I felt a good omen for my new plan when I approached Sues house and there was a big rainbow in the sky!
My first session was good with Sue giving the information on the eating and exercise plan, and being weighed and measured. That will be motivationg as the weeks go by to see the changes. It was good to meet Pear and have someone who has been successful on the plan alongside me.
Although I had shopped for food, I popped to the supernmarket to get a few extras and drove home looking forward to preparing lunch. I am going to try making the breadless bread pudding as I would like to have a sweet something other than fruit. It looks yummy!
Ok then off I go to make that and then give my dogs a nice long walk. More later...........
