As I got out of the car in the supermarket car park this week, I was greeted by the delicious smell of hot cross buns…mmmmm, clever marketing ploy! Anyway, it got me thinking how I could make a healthier version of this tempting smell and so I have come up with this concoction which I have based on a bread pudding recipe. I think you could adapt it pretty much to your own taste by substituting the apple for banana and using different dried fruits and nuts and spices. I would be interested to hear your ideas and comments..
So, here’s my version:
(No added sugar, no wheat, no dairy)
1 can coconut milk
1 ½ cups of rolled oats
1 egg
2 cupfuls (or more) Raisins
10 chopped dried apricots
Handful (or more) chopped walnuts
1 large apple, peeled and chopped
Mixed spice (to taste)
Soak the oats in the coconut milk for at least 1 hour.
Mix in the egg.
Add fruit, nuts and mixed spice to taste.
Pour into oven proof dish.
Bake in oven 180 degrees until smells cooked, is firm to touch and browned on top – approx 45 minutes.
Serve warm or cold.

Hi, I tried your breadless pudding although I did not have enough sultanas so added some dates and I did not have walnuts but added almonds it smelt so good when I took it out of the oven I had to eat some straight away and it is really good and so healthy. I felt all those oats and dried fruits were being so good for me.

Gorgeous! I substituted almonds, added grated nutmeg and flakes almonds on the top. I forgot the egg however it was still gorgeous.
